Deer meat can potentially carry Trichinosis: Under cooked deer meat is gambling death!
But then the studies that I have done, I would consider any under cooked meat is inviting illness.

Normally I would agree with you concerning most things that the medical profession foist upon us. However, the CDC statistics of how many people are hospitalized and how many people die each year from food poison, and then declaring that a good portion of those hospitalizations and deaths are directly from under cooked meat, that is a different story.
I have had food poisoning one time and that is enough for me! At first it got so bad I really thought I was going to die, and then it got so much worse that I was afraid I wouldn't die. For three days afterwards I was so weak that I could barely walk. Never do I want to experience anything like that again!
Then a good friend of mine in Mina, Nevada ate under cooked Jack Rabbit. He was carried to St. Mary's hospital in Reno, Nevada where a little over two weeks later they pronounced him dead.
I do not think you can show me one reputable place that will claim eating rare wild game is healthy! However, I reckon if you like the taste enough to want to roll the dice, that is great, but I sure would not class it among healthy food!

When it comes to under cooked meat one needs to take into account if the meat is ground or whole(ish). If it is ground then the inside needs to reach the proper temperature but can still be pink, if it is whole(ish) then the outside need to reach the appropriate temperature. I will post this info and leave it to all readers to decide for themselves what is safe, and is not safe!
Unlike grain-fed domestic beef where harmful bacteria like E. coli primarily live on the exterior (making a rare or medium-rare whole cut safe as long as the outside is seared), wild game and poultry carry distinct internal hazards:
Parasites: Wild game (such as wild boar, bear, and venison) can harbor parasites like Trichinella larvae or flukes embedded deep within the muscle tissue, not just on the surface. A quick surface sear will leave internal parasites completely untouched.
Pathogens: Poultry naturally harbors internal pathogens like Salmonella distributed throughout the meat fibers, requiring uniform internal heat to render it safe.
To eliminate these risks, wild game meat and poultry must reach a safe internal temperature throughout (typically 160°F to 165°F depending on the type of game and whether it is ground or whole muscle). Relying strictly on surface searing for wild game leaves the interior vulnerable to foodborne illness.
